Pensavate che vi avessi abbandonato è?? Magari qualcuno di voi era pure contento...
E invece no, ci sono ancora. Un po' latitante, ma ci sono.

Per farmi perdonare vi darò la ricetta di uno dei miei piatti più gettonati:

I BIGNE'



Questo "guscio" di pasta choux vuoto all'interno, è neutro e proprio per questo può essere riempito sia con farciture dolci che salate.

In effetti quando preparate l'impasto potete farne una dose doppia, in modo da avere antipasto e dolce... e potete anche prepararli il giorno prima!

Ma passiamo alla ricetta:

INGREDIENTI per 60-70 bignè medi

150 gr farina 00 – 4 uova + 1 tuorlo – 125 ml latte – 125 ml acqua – 100gr burro – 1 cucchiaino zucchero – mezzo cucchiaino sale

PREPARAZIONE

In un pentolino versare l'acqua, il latte, il burro, il sale e lo zucchero. Mescolare bene e portare a ebollizione.
Quindi spegnere la fiamma e aggiungere la farina tutta in una volta. Mescolare con un mestolo di legno fino a ottenere un impasto omogeneo, rimettere la pentola sul gas medio e far asciugare per un paio di minuti mescolando sempre. Capirete che sono pronti quando l'impasto comincerà ad attaccarsi alla pentola.
Spegnere il gas, trasferire l’impasto in una ciotola capiente e far intiepidire. Quando il composto sarà abbastanza freddo aggiungere un uovo alla volta, mescolando in modo che l’uovo sia amalgamato prima di aggiungere l’altro. (se avete una impastatrice vi consiglio di usarla, dopo un paio di uova comincia a diventare faticoso! )
Mettete l'impasto in frigo per 15 min. e poi trasferitelo in un sac a poche con la bocchetta liscia, tonda e abbastanza grande. Su una teglia rivestita di carta da forno fate delle palline grandi come una noce. Se non avete un sac a poche potete usare due cucchiaini. Il risultato estetico non sarà bellissimo ma il sapore è il solito!




Sbattere il tuorlo in più con un po’ di latte e spennellarci i bignè.
Cuocere in forno caldo a 200° per 15 min. circa. Il tempo di cottura dipende dalla grandezza dei bignè e da quanto sono "asciutti". Il risultato deve essere una pallina gonfia e dorata, non troppo secca.




Bene, i bignè sono pronti! Ora dobbiamo riempirli...

Potete usare principalmente due tecniche:

tagliare la testa dei bignè e riempirli con un cucchiaino (di solito si usa per i salati)



oppure forarli sulla base con la punta di un sac a poche. Sempre nel caso che non abbiate un sac a poche, potete usare una grossa siringa, come abbiamo fatto anche noi durante una delle prime lezioni di cucina! Il bignè è pieno quando lo sentirete gonfiare in mano!




Per le farciture usate la fantasia, potete metterci dentro quello che più vi piace.

Ad esempio gorgonzola e salame piccate



o crema di tonno e tonno affumicato



oppure philadelphia e salmone...



Per quelli dolci potete usare crema pasticcera, panna montata o crema chantilly e inzupparli nel cioccolato fuso o nella glassa di zucchero.

However, what about this? what if you wrote a catchier post
title? I ain't suggesting your information is not solid, but what if
you added a headline to possibly grab folk's attention?

Francesca is a little plain. You should peek at Yahoo's home page and note how they create article titles to get viewers to open the links.
You might try adding a video or a related picture or two to get people excited
